I think I know what I want to be when I grow up. I want to be a soup maker. Is there a special name for that? Something French and sort of culinary-ish, perhaps? Or better yet, German? “Soup Meister.” Yes, I like it. When I grow up I will be the Soup Meister.
I made butternut squash soup for the first time tonight. I’m happy when I’m making soup. I’m even happier when I’m eating soup.
Butternut soup is easy to make… sautee chopped onions in butter… add 6 cups of chicken broth… at 2 to 3 pounds of chopped butternut squash… simmer until the squash is soft… puree the squash in a blender…
Ah… that’s where things went wrong for me. It seems we had two blenders in the house after my son moved home last summer. My daughter, ever the one to organize and de-clutter the house, did away with one of the blenders. However, she mistakenly did away with the base from one and the glass jar from the other. Now we have a base and jar that don’t fit properly. So, I had to squash the squash by hand through a colander.
The end result was delicious! Add a little salt and pepper. Sprinkle with nutmeg. Yum!
Now I’ll have to tell my kids I want a new blender for Father’s Day.
